Hop Union Brewery's history started from a small village bakery.
The origins of Hop Union Brewery go back to 2006 when its predecessor Great Western Brewing Company opened in a modest village bakery located in Hambrook. During its early days the brewery operated on a small scale and produced pint-sized batches while each pint reflected intense passion and dedication. Several years later our team received numerous awards for their traditional cask beers created using open-top fermenters which deliver a pint that commands appreciation from craft enthusiasts.
But we didn’t stop there.
Our original site became too small for our business needs by 2019. The combination of increasing demand and our expanding vision signaled it was time to transform. We excavated a borehole for Bristol's best water supply while building a modern brewery facility and adopted the new identity of Hop Union Brewery which symbolises our dedication to community engagement and brewing excellence unity.
Bold Brews, Big Characters
Our beers narrate tales which at times deliver laughs.
Take Bloody Nora, our Blood Orange IPA. The beer's lively taste matches its name while delivering the playful British expression through a strong tangy and zesty taste. Whakapapa stands as our New Zealand Pale Ale with a complex name that twists tongues while using hops from the southern hemisphere. Scallywag Premium Bitter successfully blends mischief with tradition into each pint.
The handcrafted labels of each beer from Alpha Centauri Galaxy IPA to Bees Knees Honey Pale showcase vibrant colours and unique characters. You will find a perfect brew whether you prefer bitters, IPAs or lighter options like our Two Steppin’ lager.
Customers can order our beers through online purchases or directly from our Bristol taproom in cans, bag-in-box, or on tap. We provide local shipping and subscription services to ensure you never run out of our beer.

Our search for new local talent continually brings us fresh names to remember such as Tom Martin. The intimate acoustic performance at 7 PM this Friday delivers the perfect escape from Monday through Thursday work stress. Sip, sway, and soak it all in.
🧠 Taproom Quiz Night
Our quiz nights offer a unique experience unlike typical pub trivia nights. Attendees should look forward to themed rounds and quirky questions along with live saxophone solos. It's not just trivia; it's theatre. Every other Thursday we welcome you to join us with your brightest friends or those who have a wealth of knowledge about 90s sitcoms.

Water: Our brewery sources all of its Bristol water directly from our personal borehole.
Energy: A solar panel array installed on our southern rooftop provides power for the majority of our brewery operations.
Waste: Hop Union converts spent grain into cattle feed and fertilizer to ensure zero waste.
